Strawberry Bread Recipe

I have made my first attempt at making Strawberry Bread. It’s in the oven right now and, of course, I’ll be sure to come back and post the results when it’s done. In the meantime, here is the recipe I used…

Strawberry Bread

3 eggs
1 1/2 cups sugar
1/2 cup cooking oil
1/2 cup non-sweetened applesauce (or use 1 cup oil and omit applesauce)
2 teaspoons vanilla
2 cups all-purpose flour
1 cup old fashioned oats
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
2 cups crushed strawberries
1 cup crushed nuts

Beat eggs and sugar together; add applesauce, oil and vanilla. Mix well.
 
Mix dry ingredients together (flour, baking soda, baking powder and salt) well; add oats and blend together well.

Mix flour mixture together with wet mixture; blend well.

Fold in strawberries and nuts.

Pour mixture into two greased regular-sizeed loaf pans. (DO NOT OVERFILL PANS) Bake at 350 for one hour.

I played around with this recipe, so hopefully it will come out nice and tasty. I added the applesauce and nuts. I didn’t have enough oil and applesauce makes a nice healthy substitute. I would love to have put pecans in this bread, but I had walnuts today, so that’s what I used. I hope it’s yummy. Will edit as soon as I know… 😀

UPDATE 1:

ACK!!! I just learned my first strawberry bread lesson. Do NOT overfill the loaf pans. I filled the loaf pans mostly full because that’s what I do with banana nut bread and it turns out fine. Not the case with strawberry bread. I smelled something burning and, yep, some of the batter was cooking over and burning in the bottom of my oven. I just hope the bread can be salvaged. (I almost didn’t post this because it’s embarassing, but I guess most of us have kitchen missteps from time to time and it’s good to learn as we go. I hope.)

UPDATE 2:

I am happy to report that the bread survived my bungled baking. Yay!! It is really quite good. I wasn’t sure what to expect, but it is really quite tasty. Not a strong strawberry taste like I was expecting, but still VERY good. I’m just happy it wasn’t a total flop. Remember: DO NOT OVERFILL LOAF PANS!! I would say fill maybe half to 3/4, but leave rising room!!

Quiet Time…

I am so tired today. Part of the reason is because someone (*ahem*MARIANA*ahem*) was up at 3:45 this morning. Ummm hmmm. She was up and chipper. We brought her into bed with us and she toss/turned until at least 5:15 before she went back to sleep. We were not amused. This is an almost three year old here, not a newborn. ACK!! Hopefully she will sleep better tonight. Pleeeeeeease! Anyway, having that stretch of time taken out of my sleep was just brutal. I’m dragging today. It’s affecting me in several ways because I find that I’m not only tired, but I have a short fuse on my patience. So, I just told Macey that we’re going to have quiet time starting at 1pm. I’m thinking half an hour to an hour of silence and relaxation should be therapeutic. It seems like a good plan when I see it in writing, now let’s just hope it comes to fruition. Otherwise, I may have to find some toothpicks and go Fred Flintstone style on my eyelids this afternoon to stay awake. 😉

Early Release Day

It’s early release day for our public schools. That means Miss Macey will be coming home early today. Yay!! Actually, I plan to pick her up even before the regular release time so that we can have lunch together as a family. On early release days, they still feed the students lunch, only they move up the lunch times so that every grade gets to eat before leaving. Macey’s class normally eats at 12:53, but today they will go to lunch at 11:32. After a half hour for lunch, they go back to their classroom and have about 20 minutes before packing up to leave for the day. So, Macey won’t miss much (if anything) at school by leaving  a bit early AND she’ll get to have lunch with her family. What a treat!

Speaking of treats – Macey had two pretty amazing treats yesterday courtesy of her daddy. First he was “mystery reader” in her classroom yesterday morning. I wish I could have been a fly on the wall because Mickey told me all about how excited she was that he was there!! He read a Veggie Tales alphabet book first. Then, because it was Dr. Seuss’ birthday, he read The Foot Book which Macey and her teacher picked out for him to read. He and Macey have been reading that book together for a long time, so that was really cool.  As if having Daddy be mystery reader wasn’t enough, Macey got another surprise when Mickey went to have lunch with her at school yesterday. He said he tried to stay hidden so she wouldn’t see him when she came into the cafeteria, but she spotted him right away and practically hopped all the way over to him. She was THRILLED that he was there. Yesterday was not only her favorite school lunch (cheese stuffed bread sticks – yum), but she also got to have a lunch date with her Daddy. What  a day!! In true Macey form, she said the only thing that was not good about it was that some kids might be sad that their daddies didn’t get to come to school two times. What a sweet, compassionate child she is!! The girl has such a big heart. 

I took Mariana back to the pediatrician’s office yesterday. I had scheduled an appointment to see one of the pediatricians at our practice that is most familiar with her, but he was running way behind and we opted to see a nurse practitioner instead of waiting. The short version of the story is that it took some doing, but I got the NP to listen to my “mama’s intuition” about changing Mariana’s medication. She was on an antibiotic that is penicillin based and it didn’t seem to be helping her. I requested a change. I know the seriousness of antibiotics and I know not to “fool around” with them, certainly. When one is not working and the symptoms are worsening, it’s time to reevaluate. So, we did. We changed her meds and she is doing much better today, on the whole. Praise God!! Mariana is seeing her ENT next week and hopefully we can come to a good plan to help her get well and stay well. Fortunately, I have to say that this winter has been far and away better than last, so that is a HUGE praise. Maybe we can get her on the right track and keep it that way.

After taking a day off to rest on Sunday, I got back on my work-out schedule last night. This is my last week on the first level of Biggest Loser Boot Camp. Need I say again that this is a GREAT work out?! Whew! It works up quite a sweat and has me out of breath in points, but I love it.

I have a ton of fresh strawberries and need something to do with some of them. The girls are eating them like crazy, which is great, but I don’t want any to go bad. I was thinking of looking for a good bread recipe. Any other ideas? Please share if you have any recipes using fresh strawberries. Preferably something that keeps nicely.

Not Me! Monday

I have seen MckMama’s Not Me Monday entries before, but have previously never done one of my own. Well, that changes today. Here is my first edition of Not Me! Monday…

Today I did not just about lose my mind when I discovered (via Macey telling me frantically) that Mariana had dumped a lot of fish food into Macey’s betta fish’s tank. I did not feel the top of my head hinging on like a boiling teapot as I knew I was going to have to clean that tank again. I just cleaned the darn thing last week. And, I did not wait the allotted amount of time before putting the fish back in the tank. (Okay, the part? It’s true. I didn’t. He lived.)

Early today I did not feed Mariana slices of deli turkey and a cookie and call it lunch because we were pressed for time after a doctor visit. Not me.

I also didn’t buy a package of mini Moon Pies and eat one on the way home from the grocery store today because I was starving. And, I certainly didn’t eat another one after I finished my sensible Smart One for lunch. Who would do THAT?! Not me. 

I didn’t pull up beside a police car today and hope that he wouldn’t get behind me and see that our tags need to be replaced. EEP!! (We’re late. Mickey’s working on it. Diligently, I might add.)

And, I know I didn’t just make three mini loaves of banana nut bread knowing I’m trying to watch what I eat these days. That could NOT have been me. 

So, what didn’t YOU do lately?! 😀

Banana Nut Bread Recipe

I really should be cleaning house right now. It needs to be done. However, I just put some banana nut bread in the oven to bake and I was inspired to post this recipe to share it. This is one of the best recipes I’ve ever tried for banana nut bread. The recipe is from a small church cookbook that was given to me by Mickey’s grandmother a few years ago. I have used this recipe and given it out SO many times. It’s fantastic!!

Banana Nut Bread

1 (8oz) block cream cheese, softened
1 cup sugar
1/4 cup (half stick) butter, softened
1 cup (about 3 medium) mashed bananas
1 teaspoon vanilla
2 eggs
2 1/4 cups all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup nuts, chopped

Combine the cream cheese, sugar and margarine; cream well together. Blend in bananas, eggs and vanilla. Mix dry ingredients together and then mix together well with wet ingredients. Fold in nuts. Pour into greased and floured 9x5x3″ loaf pan. Bake at 350 for 1 hour. (Makes one loaf)

NOTES:

  • I added the vanilla and the salt to my recipe. The original didn’t call for those, but I like the additions.
  • I typically make three small loaf pans of this bread.
  • Adjust the baking time to your oven. I have had to cook one loaf for slightly more than an hour most of the time. The bread is done with a knife comes out clean.
  • The nuts I like to use most often are pecans. Today I used walnuts because that’s what we had. Either are tasty in this bread.
  • When baking bread, a small dish of water in the oven will help keep the crust from becoming too hard or brown. (This is a tip in the cookbook)
  • Bananas that have darkened can be peeled and stored in a plastic container in the freezer until ready to use. (Another cookbook tip)
